Calbuco Chardonnay 2015



Golden yellow with a green flash. Aromatic and expressive, with intense perfumes of tropical fruits such as papaya, peach, banana and pineapple. Very well balanced, the palate is smooth and silky with tremendous volume and a long finish.

A rainy winter at the start of the 2014/2015 season helped to accumulate enough water for the entire growing season. January was very cloudy, but February was partially clear and a bit warmer than usual, which allowed harvest to begin at the end of the month with good, crisp, and aromatic skins with the correct sugar and acidity levels. The fruit showed good quality and concentration.

The grapes were de-stemmed before gentle crushing, then quickly chilled to reduce their temperature and maintain the aromas and flavours of the variety. After pressing, the musts were separated into different qualities in accordance with the amount of pressure exerted during crushing. The juice was clarified by decantation at 8ºC with pectolytic enzymes. Fermentation took place in stainless steel tanks at 14ºC.
