Calbuco Sauvignon Blanc 2015



Slightly greenish pale yellow. Clean and bright, this wine has intense, fresh and pure aromas with notes of grapefruit and lemon. Balanced and harmonious, it has a pleasant volume, a refreshing acidity and great development in the palate. It has an interesting and persistent finish.

The vineyards are located in Chile’s Central Valley, which is the strip of land between the Pacific and the Andes. The climate here is strongly influenced by both the ocean on one side and the mountains on the other. Soils are very mixed with some clay as well as the usual Chilean patchwork of loam, limestone and sand.

A rainy winter at the start of the 2014/2015 season helped to accumulate enough water for the entire growing season. January was very cloudy, but February was partially clear and a bit warmer than usual, which allowed harvest to begin at the end of the month with good, crisp, and aromatic skins with the correct sugar and acidity levels. The fruit showed good quality and concentration.

The grapes were hand-picked, destemmed and crushed in an oxygen-free environment. The must was quickly chilled to help preserve aromas and then pressed. The juice was allowed to settle for 36–48 hours prior to fermentation at 12º–14ºC. The wine was then racked off its lees and remained in tank until bottling.
