Crystallum Paradisum 2012




Violets, cassis and plums on the nose are followed by a fresh and textured palate. There is a lovely combination of edgy tannin and lively fruit giving the wine life and vibrancy. The Mourvedre adds spice and backbone to the wine, combining beautifully with the succulence and silkiness of the Syrah, and fruity characters of Grenache.

The grapes used in the Paradisum all originate from the Swartland. The three vineyards are grown on granite soils on the slopes of the Perdeberg mountain. The vines are all bush vines and all older than 15 years. They are farmed naturally with no irrigation, following organic principles with no herbicides or pesticides used.

Vintage 2012 will be seen as one of the great Cape vintages. The winter was very cold with plenty of rain leading into spring and summer seasons that were very dry, but with moderate heat and no heat spikes that can disrupt sugar to acid balance prior to picking. These factors combined to produce a vintage of high yields, but incredible quality that is very rare indeed.

The Syrah and Mourvedre portions were de-stemmed with 30% left as whole clusters. The wine was naturally fermented with minimal intervention. Both varieties were left on their skins for four weeks.
