Mitolo Jester Cabernet Sauvignon 2014




Deep garnet red. Lifted, fresh and undeniably varietal characters of violets and blackcurrant with underlying herbal notes of green capsicum and mint. Fresh, bright, youthful and full of vitality, the wine is bursting with red berry and cassis flavours. It is medium to full bodied with a velvety, plush mid palate, yet finishes quite dry, with nervy acidity and a savoury grip that works beautifully with food.

The grapes come from the Willunga district of McLaren Vale, where there are heavy grey loam soils over sandstone, intermixed with black Biscay clay. These soils, combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Yields are around 10 tonnes per hectare.

The 2013 vintage was a great one for growers in McLaren Vale, producing deeply flavoured wines with poise and balance. A mild start to the summer with little precipitation was followed by very hot conditions in January and February 2013. Luckily, high winter rainfall had created more water reserves in the soil than previous years which meant the vines were kept hydrated during the hot summer. These hot conditions combined with a lack of rain throughout the growing period meant the grapes matured very quickly and brought harvest forward by two weeks in March.

20% of the grapes were left to dry on 10 kg drying racks for six weeks and five days in the traditional Amarone manner to concentrate flavour. The fruit for Jester was fermented on its skins for six days at cool temperatures to enhance the pure berry fruit flavour. The wine was then pressed and underwent partial barrel fermentation. Natural malolactic fermentation occurred before the wine was racked. This wine was aged in two to four year old French oak for nine months.
