Mount Horrocks Watervale Riesling 2015

Bright, lime-edged, pale white gold. A spring garden of florals - lime blossom, honeysuckle and spice. Pristine and almost crystalline, this is a typical delicate Mount Horrocks Riesling displaying lemon-lime and tropical fruits and pleasing minerality. A wine of great purity and style that will age confidently for 10-12 years.

The low yielding Watervale vineyards are east facing, with a mixture of red loam, loamy/clay and marl soils. The fruit comes from a single, unirrigated, hand pruned vineyard. These Riesling vines were originally two wire trained (the majority of Clare Valley producers still use the traditional two wire training system). Stephanie however chose to change the training system so that the canopies are now trained upwards, with foliage wires and vertical shoot positioning.

The grapes were cool crushed and de-stemmed and only the free run juice was used. The must fermented in stainless steel tanks at 14-16°C over a two to three week period. The juice was inoculated with neutral yeasts and fermented to dryness. No malolactic fermentation occurred.
