Omrah Great Southern Cabernet Merlot 2012




Open Omrah Cabernet Merlot and discover ripe, aromatic cassis and black plum complimented by toasty oak notes and a hint of cool climate spearmint. A wine of full bodied structure with firm tannins, a core of ripe black fruits, balanced acidity and lively flavours that are the hallmark of the variety.

Fruit for the 2012 Omrah Cabernet Merlot is principally from the Great Southern and is largely estate fruit with a dash from the Nield Vineyard of Blackwood Valley in the south west of Western Australia. A blend mainly from their five vineyards, the fruit is grown on well-drained gravel laterite soils with vertical shoot positioned canopies, and is managed for maximum light exposure on the fruit, which is so important for Cabernet in minimising greenness and aiding in flavour and tannin ripeness.

A generally warm and dry February and March allowed fruit to ripen steadily and good flavours to develop. A hot spell at the beginning of March brought the reds forward and a warm dry autumn allowed them to finish off slowly, retaining intense aromas and flavours.

Fruit was harvested when flavour-ripe and was simply crushed, fermented warm, pressed gently after an average of ten days on skins and racked a number of times before going into barrel after malolactic fermentation was completed. 25% new oak was used, an 80/20 split of French and American oak barrels and the wine was aged for 20 months before blending, filtration and bottling which took place in February 2013.
