Shaw and Smith M3 Chardonnay 2010
The 2010 M3 is fresh, elegant and fine. The nose has a lovely smokey burgundian character, with the oak tucked very firmly into the background. On the palate, the minerally fruit is poised, racey and long, with lovely acidity and complexity.
The M3 Vineyard at Woodside is named after the vineyard owners, Michael and Martin along with Michael`s brother Matthew. It was planted in 1995. Soils here are sandy loam over red/yellow clay with underlying shale. The vines are planted at a high density of 2,780 vines per hectare and are hand pruned with vertical shoot positioned canopies. The vineyard is a multi-clonal blend of I10V1, Bernard 95 and Bernard 76 from Burgundy. Low yields, no more than 2.5 kilos per vine, are achieved by aggressive pruning and pre-harvest bunch thinning.
Welcomed winter rains replenished sub-soil moisture. Other than a spike of hot weather in November, the growing season was very mild and harvest weather perfect. Below average crops and cool weather resulted in intense flavours and high natural acidity. An excellent vintage!
Hand picked grapes were chilled overnight and then whole bunch pressed. The must was barrel fermented with over 50% wild yeasts in one third new, one third one year old and one third two year old French barriques (approx 228 litres) for ten months during which time the lees were regularly stirred and malolactic fermentation allowed to take place.
